- Arepas: smooth breads, either provided simply at foods or filled with beef, fish, or cheese and consumed as a snack from an arepera.
- Mondongo: tripe prepared in bouillon with clean vegetables, potatoes and corn.
- Cachapa: like a tortilla, a fresh corn hot cake, provided with cheese and/or ham.
- Hallaca: vegetables, meat, olive filling in corn dough, steamed in plantain leaves.
- Cachito: hot breads roll full with ham.
- Pabellón: shredded beef, beans, fried plantain, and rice.
- Muchacho: roast loin of beef in sauce
- Sancocho: fish stew with vegetables
- Parillada: barbequed meats
Colombia

- Ajiaco: chicken soup with corn, potatoes and capers.
- Perico or Pintado: small cup of coffee with milk.
- Tinto: small cup of strong, black coffee.
- Café Con Leche: coffee with lots of milk Black, or regular tea, isn’t well known, but aromáticas, natural tea, are.
- Cuy: grilled guinea pig.
- Bandeja Paisa: ground beef, beans, chorizo, fried egg, fried plátano, avocado, and chicarrón.
- Tamales: pork, vegetables and rice mix, steamed in bananas leaves.
- Lechona: prepared pig full of rice, meat, peas.
- Hormiga Culona: fried ants, unique to Santander.
